From the Kitchen: Low Carb Pizza Skillet

This is one of those simple, hearty meals that comes together quickly and completely satisfies a pizza craving — without the crust. Loaded with meat, rich sauce, and plenty of cheese, it’s a dependable go-to for an easy, filling supper.

Ingredients

  • ½ lb ground sausage

  • ½ lb ground beef

  • ½ lb ham, cut into chunks

  • ½ package pepperoni

  • 1 can mushrooms, drained (or fresh mushrooms, sautéed)

  • 1 (15 oz) can tomato sauce

  • ½ lb mozzarella cheese, shredded

  • ½–¾ cup grated Parmesan cheese

Seasonings (to taste):

  • Garlic powder

  • Onion powder

  • Salt

  • Black pepper

  • Italian seasoning

  • Sugar (optional, to balance acidity)

Instructions

1. Brown the meat

In a large skillet (cast iron works well), cook the ground beef and sausage over medium heat until browned.

Drain excess grease.

2. Build the sauce

Add the tomato sauce to the skillet.

Season generously with:

  • garlic powder

  • onion powder

  • salt

  • pepper

  • Italian seasoning

  • a small amount of sugar (if needed to balance acidity)

Stir well and let simmer briefly.

3. Add toppings

Layer in:

  • ham chunks

  • mushrooms

  • pepperoni

  • or any additional pizza toppings you prefer

4. Add cheese

Top evenly with:

  • mozzarella cheese

  • Parmesan cheese

Sprinkle a little extra Italian seasoning, salt, and pepper over the top if desired.

5. Bake

Transfer skillet (or pour into a baking dish if needed) and bake at 400°F until the cheese is fully melted and beginning to brown.

  • This dish is very flexible — use whatever meats or vegetables you have on hand.

  • Fresh mushrooms can be sautéed ahead of time for deeper flavor.

  • Let it sit a few minutes after baking so it thickens slightly before serving.

Skip the meat and start by sautéing a hearty mix of vegetables such as mushrooms, zucchini, cabbage, peppers, or broccoli in a little olive oil or butter until tender and most moisture has cooked off. Then add the tomato sauce and seasonings and let it simmer for a few minutes to develop flavor. Proceed with layering additional vegetables if desired, top with cheese, and bake as directed.
