From the Kitchen: स्वादिष्ट edition (Hindi for DELICIOUS!)

If I had had the belly space, I would have eaten the entire pan! It was absolutely amazing!

Low Carb Butter Chicken

Ingredients (4 servings)

Chicken

• 1½ lb chicken thighs or breasts, cut into chunks

• 1 tablespoon olive oil

• Salt

• Pepper

Sauce

• 3 tablespoons butter

• 1 small onion, finely diced

• 3 cloves garlic, minced

• 1 tablespoon grated ginger (or 1 tsp ground ginger)

• 1 tablespoon garam masala

• 1 teaspoon paprika

• 1 teaspoon cumin

• ½ teaspoon turmeric

• ½ teaspoon chili powder (optional- chili powder)

• 1 cup crushed tomatoes

• ¾ cup heavy cream

Optional: about 2T sugar

Instructions

1. Cook the chicken

Heat olive oil in a large skillet.

Season chicken with salt and pepper and cook until browned.

Remove and set aside.

2. Build the flavor base

In the same pan melt butter.

Add:

• onion

• garlic

• ginger

Cook until soft and fragrant.

3. Add spices

Stir in:

• garam masala (I made my own since Walmart didn’t have in stock - I’ll put the simple recipe at the bottom)

• paprika

• cumin

• turmeric

• chili powder

Cook 30 seconds to bloom the spices.

4. Add tomato

Pour in crushed tomatoes.

Simmer 5–8 minutes until slightly thickened.

5. Finish with cream

Add heavy cream and stir.

Return chicken to the pan and simmer 10 minutes until tender.

Garam Masala (if you decide to make your own - can also be purchased pre-made):

Just mix:

• 1 Tbsp cumin

• 1 Tbsp coriander

• 1 tsp black pepper

• 1 tsp cinnamon

• ½ tsp cloves

• ½ tsp cardamom
